Ingredients: 2 lb. boneless skinless chicken breasts or chicken thighs (fresh or frozen - no need to thaw); 2 (15-oz) cans black beans, rinsed; 1 (15 oz) bag frozen fire roasted corn or 1 (15-oz can) sweet corn, drained; 4 jalapenos, chopped or one 4 oz can diced fire roasted jalapenos (do not use pickled jalapenos); ½ white onion, chopped; 1 (15-oz.) can fire-roasted tomatoes (do not recommend Rotel or other tomato blends); 3 tablespoons Pinch Dab Dash Simona’s Secret blend; 1 teaspoon salt; 3 c. low-sodium chicken broth; 1 tablespoon extra-virgin olive oil; 3 corn tortillas - cut into small strips
