Ingredients: cooking spray; 6 eggs (1.25 cups egg substitute for vegan option); 2 teaspoons Monterrey Herbs spice blend (see notes for other blends that work well in this recipe); 1/2 teaspoon salt (omit if using other blends because Monterrey Herbs is salt free); 1/2 cup raw spinach, chopped; 1/3 cup diced bell peppers; 1/3 cup crumbled cooked bacon or sausage or diced ham (omit for vegetarian option); 1/3 cup shredded cheddar cheese (optional)
